Herbal Actions/Properties:

Analgesic, anesthetic, antibacterial, antidepressant, antifungal, anti-inflammatory, antimicrobial, antioxidant, antiseptic, antiviral, aromatic, carminative, digestive, nervine, rubefacient, stimulant, stomachic, tonic

Nutrients/Active Ingredients: Thought to contain something called eugenol ( a phenylpropene), flavonoids, phenolic acid, and polyphenol.   Vitamin A, C, Niacin (B3), Folate (B9), calcium, iron, magnesium, phosphorus, copper, and manganese.                             

 

Common preparations:   

  • Tastes like a combination of cinnamon, cloves, and nutmeg.
  • The berries and leaves of the plant are most commonly used. 
  • Oil has been used  in perfume industry.  Used commercially as a source for eugenol and vanillin. 
  • Used as a foot bath for cold or pain in feet, in baths, and as a body scrub. 
  • Taken as herbal smoothies, drinks, vinegar, oils, or on your skin.
  • Pairs well with "fall" flavors like ginger, cinnamon, cumin. 
  • Often used in baking for breads, cakes, Jamaican jerk meats, pies, sweet potato, apples, squash, and stews. 
  •  In cooking, often 1/8 or 1/4 teaspoon is used in cooking recipes. 
  • Whole cloves are often ground to powder or used whole in pickling, canning, soups, and stews. 
  • Peppercorn mixture can be added to your peppermill. 
  • Ratio for pepper add whole allspice berries in equal proportions to black and white peppercorns (you can also add equal amount green peppercorns).  When using allspice in yeast breads, limit the amount to 1/4 teaspoon per cup of flour. It can inhibit the activity of the yeast in large amounts.  Ratio of whole berries to ground:  6 whole allspice berries = 1/4 to 1/2 tsp ground allspice.  1 teaspoon ground allspice = 1/2 teaspoon ground cinnamon plus 1/8 teaspoon ground cloves.
